Goat Cheese Spinach Quesadilla

Need a quick, healthy and very yummy lunch idea? Then I got you covered! 

This goat cheese and spinach quesadilla will take you about 15 minutes to make! Make it for yourself or your entire family, everyone will love it! Don’t have a goat cheese lover in the house then substitute it for grated mozzarella or cheddar. 

This recipe makes 1 quesadilla.

Ingredients:

2 flour tortillas

200g fresh spinach

1/2 cup soft goat cheese

1 small garlic clove, minced

1 shallot, finely chopped

1 tablespoon olive oil

1/2 teaspoon ground paprika

Salt

Black pepper

Splash of lemon juice

Directions:

  1. In a large skillet, heat the olive oil over medium-high heat. Add the onion and cook for a few minutes until translucent. Add the garlic and continue cooking until fragrant. Now, add half the spinach, ground paprika and cook until almost wilted; continue with the remaining spinach. 
  1. Transfer the spinach with the goat cheese to a blender or food processor and blend until smooth. Season with salt and pepper.
  1. Reheat the skillet over medium-high heat and add a tortilla. Scoop half of the spinach mixture onto one side of the tortilla. Fold the other side of the tortilla over the spinach and cook each side for about 3 minutes until browned. Repeat with the remaining tortilla. Enjoy!
